04 May Recipe: Hearty hummus
I love hummus, and find it goes with nearly everything. The trouble with many store-bought brands is that they contain vegetable oils, which can have an inflammatory effect in the body. Happily, it’s very easy to make your own using health-promoting extra virgin olive oil. Once you’ve tried the homemade version, you won’t want to go back.
1 can of chickpeas, drained and rinsed
1 garlic clove, crushed and roughly chopped
3 tbsp extra virgin olive oil
Juice of 1 lemon
1 tsp tahini
½ tsp cumin
1. Put all ingredients in a blender and whizz until smooth.
2. Decant into a bowl, and drizzle with extra olive oil before serving.
Tip: add ½ tsp paprika for a smokier, richer-hued hummus.
